Interestingly, in the 17th and 18th centuries, apple pie was a common breakfast item in America. It was considered a versatile dish, suitable for any meal of the day, not solely reserved for dessert. Over time, it became ingrained in American culture and eventually earned its place as a symbol of national identity.


Ingredients:

For the Pie Crust:

  • 2 1/2 cups all-purpose flour

  • 1 tsp salt

  • 1 cup unsalted butter (cold and cubed)

  • 6-8 tbsp ice-cold water


For the Apple Filling:

  • 2-3 medium-sized apples (peeled, cored, and finely diced)

  • 1/2 cup granulated sugar

  • 1 tsp ground cinnamon

  • 1/4 tsp ground nutmeg

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch


Instructions:

Step 1: Prepare the Pie Crust

  1. In a large bowl, whisk together the flour and salt.

  2. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

  3. Gradually add ice-cold water, one tablespoon at a time, and mix until the dough starts to come together. Be careful not to overwork the dough; you want it to be just combined.

  4. Divide the dough into two equal portions, shape them into circles, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Prepare the Apple Filling

  1. In a pot, combine the diced apples, granulated sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Mix well until the apples are evenly coated.

  2. Cook until apples are tender and can be pierced with a fork.

Step 3: Assemble the Apple Pie Cookies

  1. Preheat your oven to 450°F and line a baking sheet with parchment paper.

  2. Roll out one of the chilled pie crust circle on a floured surface to about 1/8 inch thickness.

  3. Place the apple filling onto the pie crust circle, leaving a border around the edges.

  4. Roll out the second pie crust disc and cut the dough into strips.

  5. Lay 6 strips vertically and evenly spaced on top of the filled pie. Use the longer strips in the center of the pie and the shorter strips on the ends.

  6. Fold every other strip (3 in total) all the way back so they’re almost falling off of the pie. Lay one of the 6 unused strips perpendicular on top. Unfold the 3 vertical strips back so they lay over the perpendicular strip. You have 5 strips left.

  7. Fold the other 3 vertical strips back. Lay one of the 5 unused strips perpendicular on top. Unfold the 3 vertical strips back so they lay over the perpendicular strip. You’re now beginning to see the beautiful woven pattern!

  8. Repeat with last 4 strips, weaving the strips over and under one another.

  9. Use a round cookie cutter or a glass to cut out circles from the apple pie.

Step 4: Bake and Enjoy

  1. Place the assembled apple pie cookies on the prepared baking sheet.

  2. Optionally, you can brush the tops of the cookies with a little beaten egg and sprinkle them with a pinch of sugar for a golden finish.

  3. Bake in the preheated oven for 15-20 minutes, or until the cookies are golden brown and the apple filling is bubbling.

  4. Let the cookies cool on a wire rack for a few minutes before enjoying. Serve them warm with a scoop of vanilla ice cream for an extra treat.
