Birria Tacos

Birria tacos have taken the culinary world by storm with their rich, flavorful broth and tender, juicy meat. This traditional Mexican dish is a perfect blend of spicy, savory, and aromatic flavors. Ingredients:
For the Birria:
2 pounds of bone-in beef (such as chuck roast or beef shanks)
10 dried guajillo chilies
2 dried ancho chilies
1 medium onion, quartered
5 cloves of garlic
2 Beef bouillon
1 teaspoon of cumin seeds
1 teaspoon of dried oregano
1/2 teaspoon of ground cloves
1/2 teaspoon of black pepper
1 cinnamon stick
4 cups of water
2 bay leaves
Salt to taste
For the Tacos:
Small corn tortillas
Chopped fresh cilantro
Chopped white onions
Sliced limes
Instructions:
1. Prepare the Chilies:
Remove the stems and seeds from the dried guajillo and ancho chilies.
Toast them in a dry pan until they become fragrant.
Boil the toasted chilies for 15-20 minutes until they become soft.
Set aside.

2. Brown the Meat:
Heat a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the beef on all sides.
Add in water, half an onion, and 2 bay leaves. Boil for an hour.
3. Make the Birria Sauce:
In a blender, combine the soaked chilies, half an onion, garlic, cumin seeds, oregano, ground cloves, black pepper, and cinnamon stick.
Blend until you have a smooth, thick sauce. Add some water if needed.
4. Cook the Birria:
In the same pot as the meat, add the strained birria sauce. Do not drain the water from beef.
Strain the sauce through a strainer so that you are only adding the liquid and not the chille pulp.
Bring it to a boil, then reduce the heat, cover, and simmer for 3-4 hours until the meat is tender and falls apart easily.
This liquid is now your consommé.

5. Shred the Meat:
Remove the meat from the pot and shred it using two forks.
Skim any excess fat from the broth.
6. Assemble the Tacos:
Warm the corn tortillas by dipping them in the consommé and placing them in a frying pan or on a griddle.
Place a generous portion of shredded beef in the center of each tortilla.
Drizzle with a little of the birria broth.
Top with chopped cilantro and onions.
Serve with lime wedges and consommé for dipping.
